Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Add vanilla extract and mix until combined.
- In another bowl, whisk together the flour and salt. Gradually add the dry mixture to the butter-sugar mix until crumbly.
- Stir in the finely chopped pecans.
- Roll the dough into small balls (about 1 inch in diameter) and place on a parchment-lined baking sheet.
Baking
- Bake in the preheated oven for 15-18 minutes, until the bottoms are lightly golden.
- Allow cookies to cool for 5 minutes before rolling in powdered sugar.
- Let cookies cool completely on a wire rack.
Notes
For a richer flavor, toast the pecans before chopping. Feel free to add a pinch of cinnamon or nutmeg for extra warmth. If the dough is too crumbly, add a teaspoon of milk at a time until it reaches the desired consistency.
