Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Add vanilla extract and mix until combined.
  3. In another bowl, whisk together the flour and salt. Gradually add the dry mixture to the butter-sugar mix until crumbly.
  4. Stir in the finely chopped pecans.
  5. Roll the dough into small balls (about 1 inch in diameter) and place on a parchment-lined baking sheet.
Baking
  1. Bake in the preheated oven for 15-18 minutes, until the bottoms are lightly golden.
  2. Allow cookies to cool for 5 minutes before rolling in powdered sugar.
  3. Let cookies cool completely on a wire rack.

Notes

For a richer flavor, toast the pecans before chopping. Feel free to add a pinch of cinnamon or nutmeg for extra warmth. If the dough is too crumbly, add a teaspoon of milk at a time until it reaches the desired consistency.
