Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, beat together the softened butter and granulated sugar until light and fluffy.
- Mix in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually incorporate this mixture into the butter mixture until fully combined.
- Gently mix in the oats.
Assembly
- On a parchment-lined baking sheet, scoop about 1 tablespoon of the cookie mixture, flatten it slightly, and add about 1 teaspoon of raspberry jam in the center.
- Top with another tablespoon of cookie dough and pinch the edges to encase the jam.
Baking
- Bake for 12-15 minutes or until edges are golden brown.
- Allow to cool slightly on the baking sheet before transferring to a wire rack.
Notes
Feel free to experiment with different jam flavors like strawberry or blueberry. Chilling the dough for 30 minutes can help if it's too soft to handle. Oats help give the cookies a heartier texture.
