Salad Ingredients
  • 4 cups green cabbage, shredded
  • 2 pieces apples, sliced (granny smith or honeycrisp) choose based on tartness or sweetness preference
  • 1 cup carrots, shredded adds color and crunch
  • 1/2 cup walnuts, chopped can substitute with pecans
  • 1/4 cup dried cranberries adds sweetness
Maple Balsamic Dressing
  • 1/4 cup balsamic vinegar
  • 1/2 cup olive oil
  • 2 tablespoons maple syrup use real maple syrup
  • 1 teaspoon Dijon mustard for a bit of zing
  • Salt and pepper to taste

Method
 

Preparation
  1. Shred the cabbage using a knife or food processor.
  2. Core and slice the apples, leaving the skins on if desired.
  3. Add the shredded carrots to the mixing bowl.
  4. Toss in the chopped walnuts and dried cranberries.
Making the Dressing
  1. In a small bowl, whisk together the balsamic vinegar, olive oil, maple syrup, Dijon mustard, salt, and pepper.
  2. Taste and adjust sweetness or zing as desired.
Combining the Salad
  1. Pour the dressing over the salad ingredients and toss well to coat.
  2. Let the salad chill in the fridge for about 30 minutes if possible.

Notes

This salad is great for meal prep and can be stored in the fridge for up to three days. Store the dressing separately to maintain freshness.
