Preparation
- Rinse the shrimp under cold water, pat them dry, and toss them in a bowl with one teaspoon of Cajun seasoning. Set aside.
- Coat the salmon fillets with the remaining Cajun seasoning, salt, and pepper.
Cooking
- In a large skillet, heat two tablespoons of olive oil over medium heat. Add the salmon, skin-side down, and cook for about 5 minutes until crispy.
- Carefully flip the salmon, add minced garlic and diced bell pepper. Cook for another 3-4 minutes.
- Add the shrimp and cherry tomatoes to the pan. Cook for another 3-5 minutes until the shrimp turn pink.
- Plate the salmon and shrimp, sprinkle with fresh parsley, and serve.
Notes
For a homemade Cajun seasoning, mix paprika, cayenne pepper, garlic powder, onion powder, and thyme. Don't overcook the shrimp to avoid rubbery texture. Pairs well with rice, quinoa, or salad.
