Ingredients
  

Seafood
  • 1 pound salmon fillets
  • 1 pound large shrimp, peeled and deveined
Seasoning and Oils
  • 2 teaspoons Cajun seasoning Add more if you're feeling adventurous!
  • 2 tablespoons olive oil
  • to taste salt and pepper
Vegetables
  • 3 cloves garlic, minced
  • 1 piece bell pepper, diced Use whatever color catches your eye!
  • 1 cup cherry tomatoes, halved
  • to taste fresh parsley for garnish For a pretty touch!

Method
 

Preparation
  1. Rinse the shrimp under cold water, pat them dry, and toss them in a bowl with one teaspoon of Cajun seasoning. Set aside.
  2. Coat the salmon fillets with the remaining Cajun seasoning, salt, and pepper.
Cooking
  1. In a large skillet, heat two tablespoons of olive oil over medium heat. Add the salmon, skin-side down, and cook for about 5 minutes until crispy.
  2. Carefully flip the salmon, add minced garlic and diced bell pepper. Cook for another 3-4 minutes.
  3. Add the shrimp and cherry tomatoes to the pan. Cook for another 3-5 minutes until the shrimp turn pink.
  4. Plate the salmon and shrimp, sprinkle with fresh parsley, and serve.

Notes

For a homemade Cajun seasoning, mix paprika, cayenne pepper, garlic powder, onion powder, and thyme. Don't overcook the shrimp to avoid rubbery texture. Pairs well with rice, quinoa, or salad.
