Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the broccoli florets with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
Roasting and Cooking
- Pop the baking sheet in the oven and roast the broccoli for about 15-20 minutes, or until tender and slightly crispy.
- While the broccoli is roasting, heat a skillet over medium-high heat. Rub the salmon fillets with olive oil and sprinkle Cajun seasoning generously. Cook the salmon for about 4-5 minutes on each side, or until desired doneness.
- In the same skillet, lower the heat to medium and melt the butter. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the shrimp, season with salt and pepper, and cook until pink and opaque, about 3-4 minutes. Add lemon juice for freshness.
Serving
- Plate the roasted broccoli, top with the Cajun salmon, and lay the garlic butter shrimp on the side. Garnish with parsley and serve with lemon wedges.
Notes
If you’re short on time, frozen shrimp work well for this recipe. Feel free to swap broccoli for other vegetables like asparagus or green beans.
