Ingredients
  

Pasta and Protein
  • 8 oz penne pasta or any pasta you prefer
  • 1 lb smoked sausage Andouille is great, but any variety you like works!
Vegetables
  • 1 medium onion, diced
  • 1 medium bell pepper, diced red, green, or whatever color fits your mood
  • 2 cloves garlic, minced because garlic makes everything better
Sauce
  • 1 can diced tomatoes 14.5 oz
  • 1 cup heavy cream bring on the lusciousness!
  • 1 tbsp Cajun seasoning adjust to your taste
  • to taste Salt and pepper
Garnish
  • to taste Chopped parsley for garnish, optional

Method
 

Cooking the Pasta
  1. Boil a pot of salted water, add pasta and cook according to package instructions until al dente, then drain and set aside.
  2. Reserve a bit of pasta water for later.
Sautéing the Sausage
  1. In a large skillet over medium heat, slice the sausage into bite-sized pieces and cook until browned, about 5-7 minutes.
Adding Vegetables
  1. Toss in diced onion and bell pepper, sauté until softened, about 3-4 minutes, then add minced garlic and cook for another minute.
Making the Sauce
  1. Pour in the diced tomatoes with juice and stir to combine.
  2. Add heavy cream and Cajun seasoning, then let simmer for about 5-10 minutes.
Combining Everything
  1. Add the cooked pasta to the skillet and mix gently, adding reserved pasta water if it seems dry. Season with salt and pepper to taste.
Garnishing and Serving
  1. Serve the pasta hot, garnished with fresh parsley if desired.

Notes

You can substitute the sausage with turkey, chicken, shrimp, or a meatless option. Leftovers can be refrigerated for up to 3 days and reheated in a pan with a splash of cream or pasta water.
