Cooking the Pasta
- Boil a pot of salted water, add pasta and cook according to package instructions until al dente, then drain and set aside.
- Reserve a bit of pasta water for later.
Sautéing the Sausage
- In a large skillet over medium heat, slice the sausage into bite-sized pieces and cook until browned, about 5-7 minutes.
Adding Vegetables
- Toss in diced onion and bell pepper, sauté until softened, about 3-4 minutes, then add minced garlic and cook for another minute.
Making the Sauce
- Pour in the diced tomatoes with juice and stir to combine.
- Add heavy cream and Cajun seasoning, then let simmer for about 5-10 minutes.
Combining Everything
- Add the cooked pasta to the skillet and mix gently, adding reserved pasta water if it seems dry. Season with salt and pepper to taste.
Garnishing and Serving
- Serve the pasta hot, garnished with fresh parsley if desired.
Notes
You can substitute the sausage with turkey, chicken, shrimp, or a meatless option. Leftovers can be refrigerated for up to 3 days and reheated in a pan with a splash of cream or pasta water.
