  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons olive oil For cooking

  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved

Preparation
  1. Rinse the shrimp and pat them dry.
Cooking
  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about a minute until fragrant.
  2. Add shrimp to the skillet and sprinkle with Cajun seasoning. Cook for 2-3 minutes until shrimp turn pink.
  3. Add chopped bell peppers, onion, and cherry tomatoes. Stir and cook for another 3-4 minutes until veggies are tender and shrimp are fully cooked.
  4. Taste and season with salt and pepper as desired. Stir to combine.
  5. Garnish with fresh parsley and serve over rice or pasta.

Notes

Consider making your own Cajun seasoning for a personal touch. This dish pairs well with rice, quinoa, or zoodles for a healthier option. Leftovers can be stored in an airtight container in the fridge for 2-3 days.
