Preparation
- Preheat your oven to 400°F (200°C). Toss diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper, then spread on a baking sheet.
- Roast sweet potatoes for about 20 minutes until fork-tender and slightly crispy.
Cooking the Shrimp
- Heat the remaining tablespoon of olive oil in a skillet over medium-high heat.
- Add the shrimp and sprinkle with Cajun seasoning, then cook for 3-4 minutes until pink and opaque.
Assembly
- Remove roasted sweet potatoes from the oven and cool for a minute.
- Top each sweet potato piece with a shrimp.
- Optional: Garnish with chopped green onions.
Notes
For picky eaters, serve shrimp and sweet potatoes separately. Sweet potatoes can be prepped in advance. Adjust the spiciness by experimenting with seasoning.
