Ingredients
  

For the Sweet Potatoes
  • 2 cups sweet potatoes, peeled and diced Roast for caramelization.
  • 1 tablespoon olive oil For roasting.
  • to taste Salt Adjust based on preference.
  • to taste Pepper Adjust based on preference.
For the Shrimp
  • 1 pound shrimp, peeled and deveined Use fresh or frozen.
  • 1 tablespoon olive oil For cooking shrimp.
  • 1 teaspoon Cajun seasoning Adjust based on spice tolerance.
For Garnish
  • Green onions, chopped For garnish.
  • Lime juice or sour cream (optional) For serving.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Toss diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper, then spread on a baking sheet.
  2. Roast sweet potatoes for about 20 minutes until fork-tender and slightly crispy.
Cooking the Shrimp
  1. Heat the remaining tablespoon of olive oil in a skillet over medium-high heat.
  2. Add the shrimp and sprinkle with Cajun seasoning, then cook for 3-4 minutes until pink and opaque.
Assembly
  1. Remove roasted sweet potatoes from the oven and cool for a minute.
  2. Top each sweet potato piece with a shrimp.
  3. Optional: Garnish with chopped green onions.

Notes

For picky eaters, serve shrimp and sweet potatoes separately. Sweet potatoes can be prepped in advance. Adjust the spiciness by experimenting with seasoning.
