  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber peeled and diced
  • 1/4 red onion thinly sliced
  • 1/4 cup fresh parsley, chopped
Dressing
  • 1 lemon juiced
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Preparation
  1. Start by bringing a pot of salted water to a boil. Add your calamari and cook for about 1-2 minutes until they turn opaque. Don't overcook them!
  2. After cooking, drain and rinse with cold water to stop the cooking process.
Mix the Salad
  1. In a large bowl, toss together the mixed greens, cherry tomatoes, cucumber, red onion, and parsley.
Whisk the Dressing
  1. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Optionally, add a pinch of red pepper flakes.
Combine and Serve
  1. Add the cooled calamari to the salad and drizzle with the dressing. Toss gently to keep the calamari rings intact.
