- Crisp up your bacon in a skillet until golden, or bake at 400°F for 15-20 minutes.
- In a small bowl, mix mayonnaise (or Greek yogurt) with salt and pepper.
Assembly
- Spread the creamy mixture over toasted bagels.
- Layer on crispy bacon, followed by chopped lettuce and diced tomatoes.
- Add mashed or sliced avocado on top, seasoning with additional salt and pepper.
- Serve open-faced or with the other half of the bagel.
