  • 1 sheet 1 sheet of puff pastry (thawed if frozen)
  • 1 wheel 1 wheel of brie cheese
  • 1 cup 1 cup of cranberries (dried or fresh)
  • 1 cup 1 cup of pecans (chopped)
  • 1/2 cup 1/2 cup of brown sugar
  • 1/4 cup 1/4 cup of maple syrup
  • 1 tablespoon 1 tablespoon of butter
  • 1 egg 1 egg (for egg wash)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. On a lightly floured surface, roll out your puff pastry sheet until it’s about 1/8 inch thick. Cut it into 2-inch squares.
  3. Carefully slice the brie cheese into smaller pieces or rounds.
  4. Place a piece of brie in the center of each pastry square and top with a mix of cranberries and chopped pecans.
  5. In a skillet over medium heat, melt the butter. Stir in the brown sugar, maple syrup, and a pinch of salt. Add the remaining pecans and cranberries, cooking until caramelized for about 3-5 minutes.
  6. Drizzle the sweet pecan and cranberry mixture over the brie in each pastry square.
  7. Fold the edges of the pastry over the filling to create a pocket.
  8. Beat the egg and brush it over the tops of your pastry bites. Bake for 15-20 minutes until golden brown and puffed.
  9. Allow them to cool for a few minutes before serving warm.

Notes

You can prepare the bites and freeze them before baking. Adjust ingredients to suit your crowd, swapping cranberries for raisins or using walnuts instead of pecans.
