Ingredients
  

Main Ingredients
  • 2 large chicken breasts (boneless and skinless)
  • 2 large tomatoes (sliced) Get the ripe ones for maximum flavor.
  • 8 oz fresh mozzarella (sliced) Buffalo mozzarella if you want to be fancy.
  • 1 handful fresh basil leaves Because basil is life.
  • 3 tbsp balsamic glaze If you’re feeling extra chic.
  • olive oil For marinating.
  • salt and pepper To taste.
  • a pinch of garlic powder Optional, but you know it’ll make it even better.

Method
 

Preparation
  1. Start by drizzling olive oil over the chicken breasts in a bowl. Sprinkle with salt, pepper, and garlic powder, then let it marinate for at least 15 minutes.
  2. If you have time to spare, marinate it for a few hours in the fridge for boosted flavor.
Cooking
  1. Preheat your grill to medium-high heat. If you’re using a grill pan on the stovetop, heat it up and add a drizzle of olive oil so your chicken doesn’t stick.
  2. Place the chicken on the grill and cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F.
  3. Once your chicken is nearly done, layer a slice of fresh mozzarella, followed by tomato slices, and top it all with fresh basil.
  4. Close the grill lid for 2-3 minutes until the cheese gets all melty and gooey.
  5. Once it’s ready, transfer your beautiful creation to a serving platter and drizzle with balsamic glaze.

Notes

Don't forget to use a meat thermometer for perfectly cooked chicken every time. You can substitute chicken for grilled veggies or fish. Store leftovers in an airtight container in the fridge for up to 3 days.
