Preparation
- Start by drizzling olive oil over the chicken breasts in a bowl. Sprinkle with salt, pepper, and garlic powder, then let it marinate for at least 15 minutes.
- If you have time to spare, marinate it for a few hours in the fridge for boosted flavor.
Cooking
- Preheat your grill to medium-high heat. If you’re using a grill pan on the stovetop, heat it up and add a drizzle of olive oil so your chicken doesn’t stick.
- Place the chicken on the grill and cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F.
- Once your chicken is nearly done, layer a slice of fresh mozzarella, followed by tomato slices, and top it all with fresh basil.
- Close the grill lid for 2-3 minutes until the cheese gets all melty and gooey.
- Once it’s ready, transfer your beautiful creation to a serving platter and drizzle with balsamic glaze.
Notes
Don't forget to use a meat thermometer for perfectly cooked chicken every time. You can substitute chicken for grilled veggies or fish. Store leftovers in an airtight container in the fridge for up to 3 days.
