  • 2 pieces ripe avocados Halved and pitted
  • 1 cup cherry tomatoes, quartered
  • 8 ounces fresh mozzarella cheese, diced
  • ¼ cup fresh basil, chopped
  • 2 tablespoons balsamic glaze (or vinegar) Glaze recommended for sweetness
  • Salt and pepper, to taste
  • Optional: a drizzle of olive oil For added flavor

Preparation
  1. Cut the avocados in half and remove the pit.
  2. In a mixing bowl, combine quartered cherry tomatoes, diced mozzarella, and chopped basil. Add salt, pepper, and balsamic glaze, and toss gently.
  3. Spoon the tomato and mozzarella mixture into each avocado half.
  4. Drizzle with olive oil if desired.
  5. Arrange the stuffed avocados on a plate and serve.

Notes

Perfect avocados are key—gently squeeze to find ripe ones. Leftovers should be stored separately in the fridge to prevent browning.
