Caramelized Onion and Cheese Phyllo Bites

Ingredients
  

Filling
  • 1 large onion, thinly sliced Sweet onions like Vidalia or Walla Walla work beautifully.
  • 2 tablespoons olive oil
  • 1 cup ricotta cheese Can be substituted with cream cheese.
  • 1 cup shredded mozzarella cheese Feel free to experiment with different cheeses.
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
Phyllo Dough
  • 8 sheets phyllo dough Keep covered with a damp cloth to prevent drying.

Method
 

Caramelizing the Onions
  1. In a large skillet over medium heat, add the olive oil. Once heated, toss in the sliced onions, seasoning them lightly with salt and pepper. Stir occasionally for about 15-20 minutes or until they’re golden brown and soft.
Preparing the Filling
  1. Once your onions are caramelized, take them off the heat. In a large bowl, combine the ricotta, mozzarella, Parmesan, thyme, and the caramelized onions. Mix well.
Assembling the Bites
  1. Preheat your oven to 375°F (190°C). Lay one sheet of phyllo dough on a clean surface and brush lightly with melted butter or spray with cooking spray. Layer another sheet on top. Repeat for a total of four sheets.
  2. Cut the layered dough into 4 vertically and 4 horizontally, creating 16 squares.
Filling and Baking
  1. Place a spoonful of the cheese and onion filling in the center of each square. Gather the corners of the dough around the filling, pinching to create a parcel. Place them seam-side down on a baking sheet.
  2. Brush the tops with more melted butter and bake for 15-20 minutes, or until golden and crispy.
Serving
  1. Allow them to cool slightly before serving. Best enjoyed warm but still delicious at room temperature!

Notes

If your phyllo dough tears, layer another piece on top. For a spicier flavor, add crushed red pepper or smoked paprika to the cheese filling.
