  • 3 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • to taste Salt and pepper
Toppings
  • ½ cup crumbled feta cheese
  • ½ cup chopped walnuts
  • 1 tablespoon fresh parsley (optional, for garnish)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the cubed sweet potatoes, olive oil, maple syrup, salt, and pepper. Toss to coat evenly.
Roasting
  1. Spread the sweet potatoes on a baking sheet lined with parchment paper. Roast for 25-30 minutes or until golden brown and caramelized, stirring halfway through.
  2. Remove from the oven and sprinkle the crumbled feta and walnuts on top. Return to the oven for an additional 5 minutes.
Serving
  1. Transfer the caramelized sweet potatoes to a serving dish, garnish with fresh parsley if desired, and serve warm.

Notes

Don’t overcrowd the pan for proper caramelization. Feel free to toast the walnuts in advance for extra crunch. Goat cheese or Parmesan can be used as alternatives to feta.
