Preparation
- In a bowl, whisk together the lime juice, orange juice, soy sauce, garlic, cumin, smoked paprika, chili powder, and half of the cilantro.
- Place your flank or skirt steak in a large resealable plastic bag or shallow dish, and pour the marinade over it. Ensure the steak is generously coated.
- Seal the bag or cover the dish and let it marinate for at least 2 hours or overnight for better flavor.
Grilling
- Preheat the grill to medium-high heat.
- Remove the steak from the marinade (discard the marinade). Grill the steak for about 5-7 minutes on each side, depending on your desired doneness.
- Once done, let the steak rest for 5-10 minutes to allow the juices to redistribute.
- Slice the steak against the grain into thin strips.
- Sprinkle the remaining cilantro on top before serving.
Notes
For best results, marinate longer. Slicing against the grain keeps the steak tender. A stovetop grill pan can be used as an alternative.
