Ingredients
  

For the Marinade
  • 1/4 cup fresh lime juice About 2-3 limes
  • 1/4 cup fresh orange juice For sweet essence
  • 2 tablespoons soy sauce Adds a splash of umami
  • 3 cloves garlic, minced Enhances flavor
  • 1 teaspoon ground cumin Adds warmth
  • 1 teaspoon smoked paprika Provides smokiness
  • 1/2 teaspoon chili powder Adjust for desired spice level
  • 1/4 cup chopped fresh cilantro For freshness
  • to taste Salt and pepper Essential seasoning
For the Steak
  • 2 lbs flank steak or skirt steak Choose your preferred cut

Method
 

Preparation
  1. In a bowl, whisk together the lime juice, orange juice, soy sauce, garlic, cumin, smoked paprika, chili powder, and half of the cilantro.
  2. Place your flank or skirt steak in a large resealable plastic bag or shallow dish, and pour the marinade over it. Ensure the steak is generously coated.
  3. Seal the bag or cover the dish and let it marinate for at least 2 hours or overnight for better flavor.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Remove the steak from the marinade (discard the marinade). Grill the steak for about 5-7 minutes on each side, depending on your desired doneness.
  3. Once done, let the steak rest for 5-10 minutes to allow the juices to redistribute.
  4. Slice the steak against the grain into thin strips.
  5. Sprinkle the remaining cilantro on top before serving.

Notes

For best results, marinate longer. Slicing against the grain keeps the steak tender. A stovetop grill pan can be used as an alternative.
