Pie Crusts
  • 1 package refrigerated pie crusts Convenient option for a quick meal.
Seafood Filling
  • 1 cup cooked shrimp, chopped Frozen shrimp can be used; just thaw and dry off.
  • 1 cup cooked crab meat, shredded Can be substituted with your favorite seafood mix.
Sauce and Seasoning
  • 1 cup heavy cream Provides a luscious, creamy texture.
  • 1 cup seafood stock Chicken stock can also be used.
  • 1 small onion, diced Base of many great dishes.
  • 1 cup mixed vegetables Peas, carrots or any variety can be used.
  • 2 tablespoons butter
  • 1 teaspoon Old Bay seasoning Adds a unique seafood flavor.
  • Salt and pepper To taste.
Cheese
  • 1 cup cheddar cheese, shredded The gooey goodness that enhances the dish.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large pan, melt the butter over medium heat. Add diced onion and mixed vegetables. Sauté until tender, about 3-4 minutes.
  3. Stir in the chopped shrimp and crab meat, then add heavy cream and seafood stock. Season with Old Bay, salt, and pepper. Simmer for about 5-7 minutes.
  4. Once the mix thickens, remove from heat and stir in the shredded cheddar cheese.
  5. Roll out one pie crust and place it in your pie dish. Pour the seafood filling into the crust.
  6. Cover with the second pie crust, sealing the edges. Cut slits in the top for steam to escape.
Baking
  1. Bake in the oven for 30-35 minutes, or until golden brown and bubbling.
  2. Let it cool for 10 minutes before serving.

Notes

You can customize by using different seafood. An egg wash on top gives a golden color. Serve with salad or crusty bread for a complete meal.
