Cheese-Stuffed Pretzels

Ingredients
  

For the dough
  • 1.5 cups 1 ½ cups warm water (around 110°F)
  • 1 packet 1 packet (2 ¼ tsp) active dry yeast
  • 4 cups 4 cups all-purpose flour
  • 1 tsp 1 tsp salt
  • 2 tbsp 2 tbsp granulated sugar
  • 2 tbsp 2 tbsp melted butter
For the cheese filling
  • 2 cups 2 cups shredded mozzarella cheese (or your cheese of choice)
  • Optional: A touch of garlic powder, Italian seasoning, or red pepper flakes for added flavor.
For the baking soda bath
  • 0.25 cups ¼ cup baking soda
  • 1 egg 1 egg (for egg wash)
  • Coarse sea salt (for sprinkling)

Method
 

Activating the Yeast
  1. In a large bowl, combine the warm water and sugar. Stir in the yeast and let it sit for about 5-10 minutes until bubbly.
Making the Dough
  1. Add in the melted butter, salt, and flour. Mix until combined, and then knead for about 5-7 minutes until smooth.
Letting it Rise
  1. Place your dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm spot for about 1 hour or until it doubles in size.
Preparing the Cheese Filling
  1. While your dough rises, grab a bowl and mix your mozzarella cheese (and optional spices) until it’s combined.
Shaping the Pretzels
  1. Preheat your oven to 425°F (220°C). Once the dough has risen, punch it down and divide it into 8 equal pieces.
  2. Roll each piece into a long rope, about 12-14 inches. Place cheese in the center of the rope, fold it over and pinch the seams together. Shape the dough into a pretzel knot.
Baking Soda Bath
  1. In a large pot, bring about 4 cups of water to a simmer and stir in the baking soda. Carefully drop each pretzel into this bath for 30 seconds, then place them on a parchment-lined baking sheet.
Egg Wash and Salt
  1. Beat the egg and brush it over each pretzel, sprinkling a little coarse salt on top.
Baking the Pretzels
  1. Pop the pretzels in the oven and bake for about 10-12 minutes or until golden brown.

Notes

These pretzels are best served warm. You can personalize your cheese mix, keep the edges sealed tightly, and store leftovers in an airtight container for 2-3 days.
