Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until it’s light and fluffy.
- Beat in the eggs one at a time and stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture and stir until just combined.
- Fold in the chocolate chips.
- In a separate bowl, beat the cream cheese until smooth, then mix in the sugar, vanilla, and egg yolk until creamy and well combined.
Assembly and Baking
- On a lined baking sheet, place a tablespoon of cookie dough, make a small indentation in the center, and spoon in about a teaspoon of cheesecake filling. Cover with another tablespoon of cookie dough, sealing it in. Repeat for the remaining dough.
- Pop them in the oven and bake for 12-15 minutes until the edges are golden and the centers look slightly soft.
- Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack.
Notes
Don’t overbake! Chill your dough for 30 minutes if it’s too sticky. Try adding a pinch of espresso powder for a mocha twist.
