Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups chocolate chips
For the Cheesecake Filling
  • 8 oz cream cheese, softened
  • cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg yolk

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until it’s light and fluffy.
  3. Beat in the eggs one at a time and stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture and stir until just combined.
  5. Fold in the chocolate chips.
  6. In a separate bowl, beat the cream cheese until smooth, then mix in the sugar, vanilla, and egg yolk until creamy and well combined.
Assembly and Baking
  1. On a lined baking sheet, place a tablespoon of cookie dough, make a small indentation in the center, and spoon in about a teaspoon of cheesecake filling. Cover with another tablespoon of cookie dough, sealing it in. Repeat for the remaining dough.
  2. Pop them in the oven and bake for 12-15 minutes until the edges are golden and the centers look slightly soft.
  3. Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack.

Notes

Don’t overbake! Chill your dough for 30 minutes if it’s too sticky. Try adding a pinch of espresso powder for a mocha twist.
