A vibrant medley of luscious fruits tossed in a creamy cheesecake dressing, perfect for potlucks or a refreshing snack.

Ingredients
  

Cheesecake Dressing
  • 1 package cream cheese, softened 8 oz package
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping or whipped cream if you’re feeling fancy
Fruits
  • 2 cups strawberries, hulled and sliced
  • 2 cups blueberries fresh or frozen, just thaw ‘em out!
  • 2 cups pineapple, diced fresh is fab, but canned works too!
  • 2 cups grapes, halved
  • to taste mint leaves for garnish optional, for garnish

Method
 

Preparation
  1. In a medium bowl, beat the softened cream cheese until smooth.
  2. Gradually add the powdered sugar and vanilla extract, continuing to mix until well combined.
  3. Gently fold in the whipped topping until no streaks remain.
Combine Fruits
  1. In a large bowl, combine the strawberries, blueberries, pineapple, and grapes.
  2. Drizzle the cheesecake mixture over the fruit and toss gently to coat.
Chill and Serve
  1. Cover the bowl and refrigerate the salad for at least 30 minutes.
  2. Before serving, give it a light stir and add fresh mint leaves.

Notes

Pre-packaged fruit is your friend for convenience. Feel free to swap out fruits based on what you have handy.
