Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, beat together the softened cream cheese, sugar, vanilla, and egg until smooth and creamy.
- In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add in the vanilla and eggs, mixing well after each addition.
- In another bowl, combine the flour, baking soda, and salt. Gradually add this mixture to the dough, mixing until just combined. Fold in the chocolate chips.
- Scoop out a tablespoon of cookie dough, flatten it, and add a teaspoon of cheesecake filling in the center. Wrap the dough around the filling, sealing it tightly.
- Place the dough ball on a lined baking sheet and repeat.
Baking
- Bake for 10-12 minutes or until the edges are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Chill your dough for 30 minutes for better shape. You can also add chopped nuts for extra crunch.
