Ingredients
  

For the Chocolate Chip Cookies
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups chocolate chips because life is better with chocolate!
For the Cheesecake Filling
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, beat together the softened cream cheese, sugar, vanilla, and egg until smooth and creamy.
  3. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add in the vanilla and eggs, mixing well after each addition.
  5. In another bowl, combine the flour, baking soda, and salt. Gradually add this mixture to the dough, mixing until just combined. Fold in the chocolate chips.
  6. Scoop out a tablespoon of cookie dough, flatten it, and add a teaspoon of cheesecake filling in the center. Wrap the dough around the filling, sealing it tightly.
  7. Place the dough ball on a lined baking sheet and repeat.
Baking
  1. Bake for 10-12 minutes or until the edges are golden brown.
  2. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Chill your dough for 30 minutes for better shape. You can also add chopped nuts for extra crunch.
