  • 1 ¾ cups shredded mozzarella cheese For a gooey texture.
  • 2 oz cream cheese Adds creaminess.
Main Ingredients
  • 2 large eggs Binding agent for the ingredients.
  • 1 ½ cups almond flour Low-carb flour alternative.
  • 1 tsp baking powder Helps the bread rise.
  • 1 tsp garlic powder Optional for enhanced flavor.
  • 1 tsp Italian seasoning Adds savory flavors.
  • to taste Salt and pepper Seasoning to preference.
  • as needed Extra cheese For topping, optional.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a microwave-safe bowl, combine the mozzarella and cream cheese. Microwave for about 30 seconds, stir, then microwave again for another 25 seconds until melted.
  3. In a separate bowl, mix together the almond flour, baking powder, garlic powder, Italian seasoning, salt, and pepper.
  4. Add the melted cheese mixture and the eggs to the dry ingredients. Mix until combined into a sticky dough.
  5. Grease a loaf pan (or line with parchment paper) and scoop the dough into it. Optionally, sprinkle extra cheese on top.
Baking
  1. Bake for 25-30 minutes, or until golden brown.
  2. Let cool for a few minutes before slicing.

Notes

Mix thoroughly for better texture. Leftovers can be stored tightly wrapped in the fridge for up to a week. For picky eaters, consider adding finely chopped veggies like spinach or zucchini into the mix.
