Preparation
- Preheat your oven to 400°F (200°C).
- In a microwave-safe bowl, combine the mozzarella and cream cheese. Microwave for about 30 seconds, stir, then microwave again for another 25 seconds until melted.
- In a separate bowl, mix together the almond flour, baking powder, garlic powder, Italian seasoning, salt, and pepper.
- Add the melted cheese mixture and the eggs to the dry ingredients. Mix until combined into a sticky dough.
- Grease a loaf pan (or line with parchment paper) and scoop the dough into it. Optionally, sprinkle extra cheese on top.
Baking
- Bake for 25-30 minutes, or until golden brown.
- Let cool for a few minutes before slicing.
Notes
Mix thoroughly for better texture. Leftovers can be stored tightly wrapped in the fridge for up to a week. For picky eaters, consider adding finely chopped veggies like spinach or zucchini into the mix.
