Ingredients
  

Pasta
  • 8 ounces fettuccine or your favorite pasta
Shrimp
  • 1 pound large shrimp, peeled and deveined
Sauce Ingredients
  • 4 cloves garlic, minced because garlic makes everything better
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1.5 cups shredded mozzarella cheese yes, please!
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Sautéing the Shrimp
  1. In a large skillet, heat the olive oil over medium heat. Toss in the garlic and sauté for about 30 seconds until fragrant.
  2. Add the shrimp, season with salt and pepper, and cook until pink and opaque—about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
Making the Sauce
  1. In the same skillet, pour in the heavy cream and bring it to a gentle simmer.
  2. Stir in the mozzarella cheese and Italian seasoning, allowing it to melt and thicken into a creamy sauce.
Combining Everything
  1. Toss the cooked pasta in the cheese sauce, adding the shrimp back in. Stir until everything is beautifully coated in that cheesy goodness.
  2. Adjust seasoning with more salt and pepper if needed.
Serving
  1. Sprinkle fresh parsley on top for a pop of color and a dash of finesse. Serve immediately.

Notes

Don't overcook the shrimp! If they start to curl up too much, they’re overcooked. Always remember to reserve a bit of pasta water before draining. You can also mix up your cheeses like Parmesan or goat cheese for even more flavor.
