  • 1 cup shredded mozzarella cheese Or use other cheese as desired.
  • 2 tablespoons olive oil Extra virgin for a fancy touch.
  • Salt and pepper To taste.
  • Fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the loaf into 1-inch thick pieces and lay them on a baking sheet, drizzling with olive oil.
Toasting the Bread
  1. Toast the bread in the oven for about 5-8 minutes until golden brown and crispy.
Sautéing the Mushrooms
  1. Heat the remaining olive oil in a skillet over medium heat. Add the mushrooms and cook until golden and tender, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute.
Building the Toasts
  1. Pile the sautéed mushroom and garlic mixture onto each slice of toasted bread and top generously with mozzarella cheese.
  2. Sprinkle on any extra cheese if you have it.
Final Baking
  1. Return the loaded toasts to the oven and bake for an additional 5-7 minutes until the cheese is bubbly and just starts to brown.
Serving
  1. Remove from the oven, sprinkle with fresh parsley, and serve immediately.

Notes

Consider adding toppings like sun-dried tomatoes or a sprinkle of red pepper flakes. Mixing in different cheeses like gouda or fontina can also enhance flavor.
