Ingredients
  

For the filling
  • 4 medium russet potatoes, peeled and cubed
  • 1 cup shredded cheddar cheese Because cheese makes everything better!
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
For assembly
  • 6 large flour tortillas
  • 1 cup salsa Optional, but highly recommended for a flavor boost!

Method
 

Preparation
  1. In a large pot, boil the cubed potatoes in salted water for about 15-20 minutes or until they're fork-tender.
  2. Drain the potatoes and return them to the pot. Add the garlic powder, onion powder, salt, pepper, and sour cream. Mash until smooth and creamy, then fold in the shredded cheddar cheese.
Assembly
  1. Lay out the tortillas on a flat surface. Spoon a generous portion of the cheesy potato mixture into each tortilla, then roll them up burrito-style.
  2. Place the assembled burritos seam-side down on a greased skillet over medium heat. Cook until golden and crisp, about 2-3 minutes on each side.
Serving
  1. Slice them in half, serve with salsa, and enjoy!

Notes

For extra flavor, toss in chopped green onions or cilantro. Wrap leftover burritos in foil and freeze for future meals. Consider using whole wheat tortillas and Greek yogurt for a healthier option.
