Preparation
- Preheat your oven to 425°F (220°C).
- Dice your potatoes into bite-sized pieces and toss them in a bowl with olive oil, taco seasoning, salt, and pepper.
Baking
- Spread the seasoned potatoes on a baking sheet in a single layer and bake for about 20-25 minutes, flipping halfway through, until crispy and golden.
Assembly
- Lay a tortilla flat and fill it with a generous handful of roasted potatoes and a sprinkle of cheese. Optionally, add diced onions or cooked beans.
- Fold the sides of the tortilla in, then roll it from the bottom to the top, tucking as you go. Repeat with remaining tortillas.
Serving
- Heat a skillet over medium heat and toast each burrito on both sides for about 3-4 minutes, or until golden and cheese is melted. Serve with sour cream or Greek yogurt and salsa.
Notes
For extra crispiness, pan-fry the burritos in a little oil after rolling them up. Feel free to add black beans, corn, or chopped bell peppers for more nutrition.
