  • 2 cups diced potatoes Use any variety of potatoes
  • 1 cup shredded cheese (cheddar or a mix) Your choice of cheese
  • 1 teaspoon taco seasoning Or your favorite spice blend
  • Salt and pepper to taste Adjust according to preference
  • 4 medium flour tortillas Size can be adjusted
  • 0.5 cup diced onion Optional, for added flavor
  • 0.5 cup sour cream or Greek yogurt For the dipping sauce
  • Salsa For serving

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Dice your potatoes into bite-sized pieces and toss them in a bowl with olive oil, taco seasoning, salt, and pepper.
Baking
  1. Spread the seasoned potatoes on a baking sheet in a single layer and bake for about 20-25 minutes, flipping halfway through, until crispy and golden.
Assembly
  1. Lay a tortilla flat and fill it with a generous handful of roasted potatoes and a sprinkle of cheese. Optionally, add diced onions or cooked beans.
  2. Fold the sides of the tortilla in, then roll it from the bottom to the top, tucking as you go. Repeat with remaining tortillas.
Serving
  1. Heat a skillet over medium heat and toast each burrito on both sides for about 3-4 minutes, or until golden and cheese is melted. Serve with sour cream or Greek yogurt and salsa.

Notes

For extra crispiness, pan-fry the burritos in a little oil after rolling them up. Feel free to add black beans, corn, or chopped bell peppers for more nutrition.
