  • 1 sheet puff pastry (thawed if frozen) This acts as the base for the pastries.
  • 1 cup artichoke hearts Canned or frozen, drained and chopped.
  • 1 cup shredded cheese Mozzarella, cheddar, or cheese of your choice.
  • 1/2 cup cream cheese Adds creaminess and binds the filling.
  • 1-2 tablespoons fresh herbs Basil, parsley, or thyme - feel free to mix!
  • 1 egg for egg wash Gives the pastry a golden finish.
  • to taste salt and pepper For seasoning.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface and cut it into squares or rectangles, about 4 inches each side.
  3. In a bowl, combine the chopped artichoke hearts, shredded cheese, cream cheese, and chopped herbs. Season with salt and pepper.
  4. Place a spoonful of the filling in the center of each pastry square. Seal the corners to create little pockets.
  5. Whisk the egg and brush it over the tops of the pastries.
  6. Bake the pastries on a lined baking sheet for about 20-25 minutes or until golden brown.
  7. Let them cool for a few minutes, then serve warm.

Notes

You can freeze the pastries before baking. Serve with marinara sauce or zesty dipping sauces for extra flavor. Experiment with different fillings like spinach and feta.
