  • 1 cup canned artichokes, drained and chopped
  • 1 cup shredded cheese (mozzarella, cheddar, or any cheese you adore)
  • 1/2 cup cream cheese, softened
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

  2. Roll out the puff pastry on a lightly floured surface.
  3. In a bowl, combine the artichokes, shredded cheese, cream cheese, parsley, oregano, salt, and pepper. Mix until creamy.
  4. Cut the puff pastry into squares about 4 inches each.
  5. Spoon a generous amount of the artichoke mixture onto each pastry square.
  6. Fold the pastry over to form triangles and seal the edges with a fork.
  7. Brush the tops with the beaten egg.
  8. Arrange the pastries on a baking sheet lined with parchment paper.
  9. Bake for about 20-25 minutes, or until golden brown.
  10. Serve warm.

Notes

Feel free to mix up the cheeses! You can add feta for a tangy twist or goat cheese for something special. Leftover ingredients can include spinach or rotisserie chicken. Don't worry if the edges don't look perfectly sealed; they will taste delicious despite the appearance!
