Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the halved baby potatoes with olive oil, ranch seasoning, salt, and pepper until they’re well-coated.
- Spread the potatoes on a baking sheet lined with parchment paper.
Cooking
- Bake the potatoes for about 20 minutes until they’re tender and starting to crisp up.
- Add the sliced sausage to the baking sheet and stir to mix everything together. Return to the oven for an additional 10 minutes.
- Remove from the oven and sprinkle the shredded cheddar cheese on top. Bake for another 5 minutes until the cheese is bubbly and melty.
- Serve drizzled with sour cream and garnished with chopped parsley.
Notes
For a lighter option, substitute chicken or turkey sausage and try different types of cheese like pepper jack. This dish pairs well with a side salad.
