  • 2 lbs baby potatoes, cut in half
  • 1 lb smoked sausage, sliced
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream Optional for serving
  • 2 tbsp olive oil
  • to taste Salt and pepper Adjust to personal preference
  • to taste Chopped parsley For garnish, optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes with olive oil, ranch seasoning, salt, and pepper until they’re well-coated.
  3. Spread the potatoes on a baking sheet lined with parchment paper.
Cooking
  1. Bake the potatoes for about 20 minutes until they’re tender and starting to crisp up.
  2. Add the sliced sausage to the baking sheet and stir to mix everything together. Return to the oven for an additional 10 minutes.
  3. Remove from the oven and sprinkle the shredded cheddar cheese on top. Bake for another 5 minutes until the cheese is bubbly and melty.
  4. Serve drizzled with sour cream and garnished with chopped parsley.

Notes

For a lighter option, substitute chicken or turkey sausage and try different types of cheese like pepper jack. This dish pairs well with a side salad.
