  • 2 cups fresh spinach Frozen spinach can be used but must be thawed and drained.
  • 1 cup shredded mozzarella cheese Essential for the cheesy flavor.
  • 1/2 cup breadcrumbs Provides texture to the meatballs.
  • 1/4 cup grated Parmesan cheese Adds extra flavor.
  • 2 cloves garlic, minced Essential for added flavor.
  • 1 large egg Acts as a binding agent.
  • to taste salt and pepper Adjust according to preference.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, chopped spinach, mozzarella, breadcrumbs, Parmesan, minced garlic, egg, salt, and pepper. Add chopped herbs if desired.
  3. Mix well until combined and roll the mixture into bite-sized balls.
Cooking
  1. Place meatballs on a baking sheet lined with parchment paper.
  2. Bake for 20-25 minutes until golden brown and internal temperature reaches 165°F.
Serving Suggestions
  1. Serve as an appetizer, toss in marinara sauce over spaghetti, or serve in a sub.

Notes

Consider adding finely chopped bell peppers or zucchini for extra nutrition. Meatballs freeze well, bake them ahead, and reheat when needed.
