  • 2 cups all-purpose flour
  • 1/2 cup confectioners' sugar, plus more for dusting Additional sugar for dusting after baking.
  • 1/2 cup chopped dried cherries Adds a hint of tartness.
  • 1/2 cup chopped almonds Any nut can be substituted if desired.
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Preparation
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and confectioners' sugar for about 2-3 minutes until light and fluffy. Mix in the vanilla extract.
  3. In a separate bowl, whisk together the flour, chopped cherries, chopped almonds, and salt. Gradually add this to your butter mixture until just combined. The dough will feel slightly crumbly.
  4. Scoop about a tablespoon of dough and roll it into a ball. Place on the prepared baking sheets, spacing about 2 inches apart.
  5. Bake for 12-15 minutes, or until the bottoms are lightly golden.
  6. Let the cookies cool on the sheets for about 5 minutes before transferring them to a wire rack. Roll in confectioners' sugar while still warm.

Notes

Don’t overmix the dough; mixing until just combined keeps cookies light and airy. Store in an airtight container for up to a week. Experiment with different nuts or add chocolate chips for a twist!
