- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter and confectioners' sugar for about 2-3 minutes until light and fluffy. Mix in the vanilla extract.
- In a separate bowl, whisk together the flour, chopped cherries, chopped almonds, and salt. Gradually add this to your butter mixture until just combined. The dough will feel slightly crumbly.
- Scoop about a tablespoon of dough and roll it into a ball. Place on the prepared baking sheets, spacing about 2 inches apart.
- Bake for 12-15 minutes, or until the bottoms are lightly golden.
- Let the cookies cool on the sheets for about 5 minutes before transferring them to a wire rack. Roll in confectioners' sugar while still warm.
Notes
Don’t overmix the dough; mixing until just combined keeps cookies light and airy. Store in an airtight container for up to a week. Experiment with different nuts or add chocolate chips for a twist!
