Preparation
  1. In a large mixing bowl, beat the softened cream cheese until it's nice and smooth.
  2. Add in the powdered sugar and vanilla extract, and blend until you have a creamy mixture.
  3. Gently fold in the whipped topping, being careful not to deflate the mixture.
  4. Stir in the cherry pie filling and mini marshmallows, adjusting to taste.
  5. Cover the bowl with plastic wrap or transfer it to a serving dish and chill in the fridge for at least 2 hours.
  6. Serve by scooping into bowls and adding graham cracker crumbs on top if desired.
