- In a large mixing bowl, beat the softened cream cheese until it's nice and smooth.
- Add in the powdered sugar and vanilla extract, and blend until you have a creamy mixture.
- Gently fold in the whipped topping, being careful not to deflate the mixture.
- Stir in the cherry pie filling and mini marshmallows, adjusting to taste.
- Cover the bowl with plastic wrap or transfer it to a serving dish and chill in the fridge for at least 2 hours.
- Serve by scooping into bowls and adding graham cracker crumbs on top if desired.
