Ingredients
  

For the Cake
  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs, at room temperature
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
For the Cherry Topping
  • 1 jar about 24 oz of cherries in syrup (or fresh cherries, pitted and halved)
  • 2 tablespoons sugar (optional, depending on your cherry sweetness)
  • to taste Whipped cream (for serving) optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract into your dry ingredients. Mix until combined.
  4. Carefully stir in the boiling water.
  5. Pour the batter into a greased and floured cake pan.
Baking
  1. Bake for approximately 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
Cherry Topping
  1. If using jarred cherries, drain them and can optionally toss them with a bit of sugar. For fresh cherries, toss them with sugar to enhance tariness.
Serving
  1. Once your cake is cool, top it generously with the cherries and serve with a dollop of whipped cream.

Notes

You can mix in a handful of chocolate chips into the batter for extra chocolatey goodness. Feel free to substitute cherries with raspberries or strawberries based on availability.
