Ingredients
  

Truffle Base
  • 1 cup peanut butter creamy or crunchy
  • 1.5 cups powdered sugar
  • 1 cup finely chopped dried cherries
Chocolate Coating
  • 8 ounces semi-sweet chocolate, chopped
  • 2 tablespoons coconut oil

Method
 

Mix Up the Magic
  1. In a large bowl, combine the peanut butter and powdered sugar. Mix until well blended and comes together like a beautifully smooth dough.
Add in the Cherry Surprise
  1. Fold in the chopped dried cherries.
Shape Your Bliss
  1. Using your hands, form the mixture into small balls, about an inch in diameter, to make around 24 truffles.
  2. Place them on a parchment-lined baking sheet, and pop them in the freezer for about 30 minutes.
Melt the Chocolate
  1. In a microwave-safe bowl, combine the chopped chocolate and coconut oil. Heat in 30-second intervals, stirring in between, until smooth and glossy.
Coat Those Truffles
  1. Once the truffles are firm, dip each ball into the melted chocolate, ensuring they’re fully coated. Let the excess chocolate drip off before placing them back on the baking sheet.
Chill Again
  1. Place them back in the fridge for about 20-30 minutes to set the chocolate.
