Truffle Mixture
  • 1 cup cherry-flavored candy melts For melting and coating
  • ½ cup cream cheese, softened Can substitute with vegan cream cheese
  • 1 cup powdered sugar
  • 1 tsp almond extract
  • 1 cup crushed pecans Or any nuts you prefer; can omit for nut-free option
Coating
  • Extra as needed cherry-flavored candy melts For coating the truffles
  • as needed none crushed nuts For rolling after coating

Method
 

Preparation
  1. Melt the cherry-flavored candy melts in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
  2. In a separate bowl, combine softened cream cheese, powdered sugar, and almond extract, blending until well mixed.
  3. Fold the melted candy into the cream cheese mixture until fully incorporated.
  4. Chill the mixture in the fridge for about 30 minutes to firm up.
  5. Once chilled, roll a tablespoon of the mixture into bite-sized balls.
Coating
  1. Dip each truffle in the extra melted candy melts and roll in crushed pecans.
  2. Place coated truffles on a wax paper-lined baking sheet and chill for another 15 minutes to set.

Notes

These truffles can be stored in an airtight container in the fridge for up to a week. They can also be frozen for up to a month. Try using different flavored candy melts for variation.
