  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 medium bell pepper, diced
  • 1 cup shiitake mushrooms, finely chopped Button mushrooms can be used as an alternative.
  • 2 stalks green onions, chopped
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 head butter or Romaine lettuce (for wrapping)
  • Fresh cilantro leaves (for garnish)

Method
 

Preparation
  1. In a large skillet, heat the olive oil over medium heat. Add the garlic and ginger, letting the aromas fill your kitchen.
Cooking
  1. Toss in the ground chicken and cook until it’s no longer pink, breaking it up with a spatula, about 6-8 minutes.
  2. Add the bell pepper and mushrooms. Stir together and let them cook until the veggies soften—about 5 minutes.
  3. Pour in the soy sauce, hoisin sauce, rice vinegar, and sesame oil. Stir everything together and let the mixture simmer for 2-3 minutes.
Assembly
  1. Take a leaf of lettuce, scoop a spoonful of the filling into the center, top with green onions and drizzle with Thai chili sauce.
