  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup apple cider
  • 2 cups apples, peeled, cored, and sliced (Granny Smith recommended) Tart apples work best.
  • 1 cup heavy cream Can substitute with half-and-half or coconut milk.
  • 1 teaspoon thyme (fresh or dried)
  • to taste Salt and pepper
  • for garnish Fresh parsley Adds color and flavor.

Method
 

Preparation
  1. Gather your ingredients and put on your favorite apron.
  2. Heat the olive oil in a large skillet over medium-high heat until hot.
Cooking
  1. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side until golden brown and cooked through.
  2. Pour in the apple cider and add the sliced apples. Bring to a gentle boil, then reduce heat to simmer for about 10 minutes.
  3. Stir in the heavy cream and thyme, letting it simmer for an additional 5 minutes until the sauce thickens.
Serving
  1. Plate the chicken breasts and spoon the creamy sauce and apples over them. Garnish with freshly chopped parsley.

Notes

Choose tart apples like Granny Smith or Honeycrisp for best results. Leftovers taste even better the next day; store in an airtight container in the fridge.
