Preparation
- In a large skillet, heat the olive oil over medium-high heat.
- Once hot, toss in the sliced chicken. Season with salt and pepper.
- Sauté until the chicken is cooked through—about 5 minutes.
Cooking
- Toss in the sliced bell pepper and onion. Sauté everything together for about 3-4 minutes, or until the veggies are tender and the chicken is lightly browned.
- Lower the heat to medium and lay the cheese slices over the chicken and veggies. Cover the pan with a lid to help the cheese melt evenly.
- After about 2-3 minutes, you’ll have gooey, cheesy goodness!
Assembly
- Slice your sub rolls and fill each with the chicken and cheese mixture.
- Add extra toppings, if desired.
