Ingredients
  

For the Chicken
  • 2 lbs chicken thighs (skinless and boneless)
  • 2 teaspoons ground cumin
  • 2 teaspoons ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • 1 Juice of 1 lemon
For the Garlic Sauce
  • 1 cup plain Greek yogurt
  • 4 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt to taste
To Serve
  • Pita bread
  • Sliced vegetables (cucumbers, tomatoes, onions)
  • Fresh parsley for garnish

Method
 

Marinating the Chicken
  1. In a bowl, combine cumin, paprika, turmeric, coriander, garlic powder, onion powder, salt, pepper, olive oil, and lemon juice.
  2. Add the chicken thighs, tossing to coat evenly.
  3. Let it marinate in the fridge for at least 30 minutes (or up to overnight for maximum flavor).
Cooking the Chicken
  1. Preheat your grill or skillet over medium-high heat.
  2. Add the marinated chicken and cook for about 7-8 minutes per side until golden brown and cooked through (about 165°F).
Preparing the Garlic Sauce
  1. While the chicken cooks, mix the Greek yogurt, minced garlic, lemon juice, and salt in a bowl.
  2. Taste and adjust the garlic level to suit your liking.
Slicing the Chicken
  1. Once cooked, transfer the chicken to a cutting board and let it rest for a few minutes.
  2. Slice it into thin strips.
Assembling Your Shawarma
  1. Grab your pita, fill it with a generous amount of chicken, add your sliced veggies, and finish with a drizzle of the garlic sauce.
  2. Sprinkle some parsley on top, and enjoy your delicious homemade shawarma!
