Preparation
- In a mixing bowl, combine the chopped parsley, cilantro, minced garlic, olive oil, red wine vinegar, and crushed red pepper flakes.
- Stir it well and season with salt and pepper to taste.
- If using frozen shrimp, thaw them first. Rinse the shrimp in cold water and pat them dry with a paper towel.
Cooking
- Heat a skillet over medium-high heat and add a splash of olive oil.
- Once the skillet is hot, add the shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque.
Combining and Serving
- Remove the cooked shrimp from heat and pour the chimichurri sauce over the top.
- Toss gently to coat each shrimp with the sauce.
- Serve with lemon wedges on the side. It can be enjoyed over rice, with fresh veggies, or in a taco.
Notes
You can substitute dried herbs if fresh ones are unavailable. You can also add lemon zest to the chimichurri for extra flavor. For a complete meal, pair this dish with a side salad or crusty bread.
