Ingredients
  

For the Chimichurri Sauce
  • 1 cup fresh parsley, chopped Use fresh parsley for the best flavor.
  • 1/2 cup fresh cilantro, chopped Fresh cilantro adds a vibrant flavor.
  • 1/4 cup olive oil Extra virgin olive oil is recommended.
  • 1/4 cup red wine vinegar This gives the chimichurri its tangy flavor.
  • 3 cloves garlic, minced Freshly minced garlic enhances the sauce.
  • 1 teaspoon crushed red pepper flakes Adjust according to your heat preference.
  • to taste Salt and pepper Season to your liking.
For the Shrimp
  • 1 pound shrimp, peeled and deveined Fresh or thawed shrimp can be used.
  • lemon wedges for serving To add a zesty finish when serving.

Method
 

Preparation
  1. In a mixing bowl, combine the chopped parsley, cilantro, minced garlic, olive oil, red wine vinegar, and crushed red pepper flakes.
  2. Stir it well and season with salt and pepper to taste.
  3. If using frozen shrimp, thaw them first. Rinse the shrimp in cold water and pat them dry with a paper towel.
Cooking
  1. Heat a skillet over medium-high heat and add a splash of olive oil.
  2. Once the skillet is hot, add the shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque.
Combining and Serving
  1. Remove the cooked shrimp from heat and pour the chimichurri sauce over the top.
  2. Toss gently to coat each shrimp with the sauce.
  3. Serve with lemon wedges on the side. It can be enjoyed over rice, with fresh veggies, or in a taco.

Notes

You can substitute dried herbs if fresh ones are unavailable. You can also add lemon zest to the chimichurri for extra flavor. For a complete meal, pair this dish with a side salad or crusty bread.
