- Drizzle with olive oil, and sprinkle the garlic powder, cumin, smoked paprika, chipotle sauce, salt, and pepper. Toss until well-coated.
Roasting
- Spread the mixture on a baking sheet lined with parchment paper.
- Roast in the oven for about 25-30 minutes or until the squash is tender and caramelized.
Serving
- Once done, sprinkle fresh cilantro on top if using and serve alongside lime wedges.

Notes
You can microwave the butternut squash for a few minutes before roasting to cut down on cooking time. Adding feta or goat cheese on top after baking enhances the dish. Feel free to swap out black beans for pinto beans or add corn for additional sweetness.
