  • 1 can (15 oz) black beans, drained and rinsed
  • 1 red onion, chopped
  • 1 bell pepper (any color), diced
Seasoning and Oils
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1-2 tablespoons chipotle in adobo sauce Adjust based on heat preference
  • Salt and pepper to taste

  • Fresh cilantro for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the cubed butternut squash, black beans, chopped red onion, and diced bell pepper.
  3. Drizzle with olive oil, and sprinkle the garlic powder, cumin, smoked paprika, chipotle sauce, salt, and pepper. Toss until well-coated.
Roasting
  1. Spread the mixture on a baking sheet lined with parchment paper.
  2. Roast in the oven for about 25-30 minutes or until the squash is tender and caramelized.
Serving
  1. Once done, sprinkle fresh cilantro on top if using and serve alongside lime wedges.
  2. Enjoy the perfect blend of sweet, spicy, and savory flavors.

Notes

You can microwave the butternut squash for a few minutes before roasting to cut down on cooking time. Adding feta or goat cheese on top after baking enhances the dish. Feel free to swap out black beans for pinto beans or add corn for additional sweetness.
