  • 1 cup pitted cherries frozen works perfectly
  • 1 cup dark chocolate chips preferably high quality
  • ½ cup almond flour or any nut flour you fancy
  • 1 tsp vanilla extract for a touch of warmth

Method
 

Making Your Truffles
  1. In a food processor, combine the pitted cherries, shredded coconut, almond flour, and vanilla extract. Pulse until finely mixed.
  2. Melt dark chocolate chips in a microwave-safe bowl in 30-second bursts, stirring in between until silky smooth.
  3. Add the cherry-coconut mixture to the melted chocolate and mix until well combined.
  4. Cover the mixture and chill in the refrigerator for about 30 minutes.
  5. After chilling, scoop about a tablespoon of the mixture and roll it into balls.
  6. Optionally, roll the truffles in extra shredded coconut or crushed nuts for a decorative finish.
  7. Arrange the truffles on a plate, and they're ready to be enjoyed or gifted.
