Making Your Truffles
- In a food processor, combine the pitted cherries, shredded coconut, almond flour, and vanilla extract. Pulse until finely mixed.
- Melt dark chocolate chips in a microwave-safe bowl in 30-second bursts, stirring in between until silky smooth.
- Add the cherry-coconut mixture to the melted chocolate and mix until well combined.
- Cover the mixture and chill in the refrigerator for about 30 minutes.
- After chilling, scoop about a tablespoon of the mixture and roll it into balls.
- Optionally, roll the truffles in extra shredded coconut or crushed nuts for a decorative finish.
- Arrange the truffles on a plate, and they're ready to be enjoyed or gifted.
Notes
Make-ahead tips: These truffles can be made in advance and stored in an airtight container in the fridge for up to a week. Feel free to get creative with flavor variations or substitute cherries with other dried fruits.
