- In a large bowl, combine the finely chopped pecans, graham cracker crumbs, powdered sugar, maple syrup, and vanilla extract until well blended.
- Scoop about a tablespoon of the mixture and roll it into a ball, about the size of a golf ball.
- Place the pecan pie balls on a baking sheet lined with parchment paper and refrigerate for about 30 minutes.
- Melt the semi-sweet chocolate chips in the microwave at 30-second intervals, stirring in between until smooth.
- Once melted, dip each ball in the chocolate until fully coated and place back on the parchment paper. Drizzle with melted white chocolate if desired.
- Refrigerate again for another 30 minutes to allow the chocolate to harden.
Notes
These treats can be stored in an airtight container in the refrigerator for up to a week, or they can be frozen for future enjoyment. Try rolling them in crushed nuts or sprinkles for added variety.
