For the Cake
  • 1.75 cups all-purpose flour
  • 2 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Be careful while adding.
For the Peanut Butter Frosting
  • 1 cup creamy peanut butter
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 0.5 cups heavy cream
  • 1 teaspoon vanilla extract
For the Galaxy Decoration
  • 1 cup dark chocolate, melted
  • 1 cup white chocolate, melted
  • Food colors (blue, purple, and pink)
  • Mini chocolate peanut butter cups for topping
  • Edible glitter (optional) For extra sparkle.

Preparation
  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Mix Dry Ingredients: In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until evenly mixed.
  3. Add Wet Ingredients: Add eggs, milk, vegetable oil, and vanilla extract. Mix until smooth.
  4. Add Boiling Water: Carefully stir in boiling water and do not be alarmed at the runny batter.
  5. Bake the Cake: Pour the batter into two greased 9-inch round cake pans. Bake for 30-35 minutes or until a toothpick comes out clean. Allow to cool completely.
Frosting and Decorating
  1. Make the Peanut Butter Frosting: Blend peanut butter and softened butter in a medium bowl. Gradually add powdered sugar and heavy cream, beating until creamy. Stir in vanilla extract.
  2. Layer It Up: Once cakes are cool, place one layer on a serving stand. Spread frosting on top, place second layer on top, and frost entire cake.
  3. Decorate the Galaxy: In separate bowls, put melted dark chocolate and white chocolate, adding food coloring to each. Drizzle over cake to create a galaxy effect. Top with mini chocolate peanut butter cups and sprinkle with edible glitter.

Notes

Don't rush cooling your cake; it affects the frosting. Get creative and involve kids in decorating. Store in an airtight container at room temperature for up to 3 days.
