Ingredients
  

For the crust
  • 1.5 cups 1 ½ cups chocolate cookie crumbs
  • 0.5 cups ½ cup unsalted butter, melted Make sure the butter is completely melted
For the filling
  • 1 cup 1 cup creamy peanut butter
  • 1 cup 1 cup powdered sugar
  • 8 oz 8 oz cream cheese, softened
  • 1 cup 1 cup heavy whipping cream Whip until stiff peaks form
  • 1 teaspoon 1 teaspoon vanilla extract
For the chocolate layer
  • 1 cup 1 cup semi-sweet chocolate chips
  • 0.5 cups ½ cup heavy cream Used to melt with the chocolate

Method
 

Prepare the Crust
  1. In a mixing bowl, combine the chocolate cookie crumbs and melted butter until the mixture resembles wet sand.
  2. Press this mixture into the bottom and up the sides of a 9-inch pie dish.
  3. Place the crust in the refrigerator while you prepare the filling.
Make the Filling
  1. In a large bowl, mix cream cheese until smooth.
  2. Gradually add in the peanut butter and powdered sugar, mixing until combined.
  3. In another bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the peanut butter mixture.
  5. Add the vanilla extract, folding just until combined.
Assemble the Pie
  1. Remove the crust from the fridge and spread the peanut butter filling evenly over it.
  2. Let this sit in the fridge for about 30 minutes to firm up.
Create the Chocolate Layer
  1. In a small saucepan, combine chocolate chips and heavy cream over low heat.
  2. Stir until melted and smooth.
  3. Allow the chocolate mixture to cool slightly before pouring it over the pie filling.
Chill and Serve
  1. Cover the pie with plastic wrap and chill in the fridge for at least 2 hours before serving.
  2. Slice it up, maybe add a dollop of whipped cream, and enjoy!
