Method
Prepare the Crust
- In a mixing bowl, combine the chocolate cookie crumbs and melted butter until the mixture resembles wet sand.
- Press this mixture into the bottom and up the sides of a 9-inch pie dish.
- Place the crust in the refrigerator while you prepare the filling.
Make the Filling
- In a large bowl, mix cream cheese until smooth.
- Gradually add in the peanut butter and powdered sugar, mixing until combined.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the peanut butter mixture.
- Add the vanilla extract, folding just until combined.
Assemble the Pie
- Remove the crust from the fridge and spread the peanut butter filling evenly over it.
- Let this sit in the fridge for about 30 minutes to firm up.
Create the Chocolate Layer
- In a small saucepan, combine chocolate chips and heavy cream over low heat.
- Stir until melted and smooth.
- Allow the chocolate mixture to cool slightly before pouring it over the pie filling.
Chill and Serve
- Cover the pie with plastic wrap and chill in the fridge for at least 2 hours before serving.
- Slice it up, maybe add a dollop of whipped cream, and enjoy!
