Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, mix the sugar, egg, milk, oil, and vanilla extract until combined.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Drop dollops of peanut butter into the batter and gently swirl.
- Line muffin tins with liners or spray with cooking spray, and fill muffin cups about 2/3 full with batter.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow muffins to cool for a few minutes before serving.
Notes
For best results, don’t skimp on the peanut butter swirl. Store muffins in an airtight container for up to 3 days or freeze for up to a month.
