  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup sugar Brown sugar can be used for a deeper flavor.
  • 1 large egg Room temperature recommended.
  • 1/2 cup milk Almond milk can be used for dairy-free option.
  • 1/4 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 1/2 cup peanut butter Creamy or chunky, your choice.
  • optional chocolate chips For extra indulgence.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, mix the sugar, egg, milk, oil, and vanilla extract until combined.
  4. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  5. Drop dollops of peanut butter into the batter and gently swirl.
  6. Line muffin tins with liners or spray with cooking spray, and fill muffin cups about 2/3 full with batter.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Allow muffins to cool for a few minutes before serving.

Notes

For best results, don’t skimp on the peanut butter swirl. Store muffins in an airtight container for up to 3 days or freeze for up to a month.
