Dry Ingredients
  • 2 cups all-purpose flour
  • 1.75 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
Wet Ingredients
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cups vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water This keeps the cake wonderfully moist.
  • 1 cup semi-sweet chocolate chips Optional for extra indulgence.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure an even bake.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add your eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until well combined.
  4. Add the boiling water to the batter and mix until just combined. The batter will be thin.
  5. Fold in the chocolate chips if desired.
Baking
  1. Pour the batter evenly into two greased 9-inch round cake pans.
  2. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  3. Once baked, allow the cakes to cool in the pans for about 10 minutes. Then transfer them to a wire rack to cool completely.
Frosting
  1. Whip up your favorite frosting (cream cheese or classic chocolate) once the cakes are cooled. Frost between the layers and on top generously.

Notes

Don't skip the boiling water as it’s key to the moist texture. Store leftovers in an airtight container at room temperature for up to three days or in the fridge for a week.
