- In a large bowl, combine the ground beef, breadcrumbs, onion, parsley, egg, garlic powder, salt, and pepper. Mix until well combined.
- Roll the mixture into about 1-inch meatballs, yielding approximately 24 meatballs.
Cooking
- In a large skillet over medium heat, add a splash of oil and place the meatballs in the pan. Cook them for about 6-8 minutes until browned on all sides.
- Mix the cranberry sauce, barbecue sauce, and soy sauce in a bowl. Pour this sauce over the browned meatballs.
- Reduce heat to low, cover the skillet, and let the meatballs simmer for about 20-25 minutes.
- Once cooked through, remove from heat and serve directly from the skillet or transfer to a serving dish, garnished with parsley.
