For the Cranberry Sauce
  • 1 can (16 oz) cranberry sauce Store-bought can be used for convenience.
  • 1 cup barbecue sauce Sweet Baby Ray’s is recommended.
  • 1 tablespoon soy sauce

Method

Preparation
  1. In a large bowl, combine the ground beef, breadcrumbs, onion, parsley, egg, garlic powder, salt, and pepper. Mix until well combined.
  2. Roll the mixture into about 1-inch meatballs, yielding approximately 24 meatballs.
Cooking
  1. In a large skillet over medium heat, add a splash of oil and place the meatballs in the pan. Cook them for about 6-8 minutes until browned on all sides.
  2. Mix the cranberry sauce, barbecue sauce, and soy sauce in a bowl. Pour this sauce over the browned meatballs.
  3. Reduce heat to low, cover the skillet, and let the meatballs simmer for about 20-25 minutes.
  4. Once cooked through, remove from heat and serve directly from the skillet or transfer to a serving dish, garnished with parsley.

Notes

Make ahead by preparing the meatballs and freezing them uncooked. For sauce variations, consider adding a splash of orange juice or chili powder for extra flavor.
