Ingredients
  

Wet Ingredients
  • 1 cup unsweetened applesauce
  • 1/2 cup butter, softened Don't skimp on this!
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1/2 tsp vanilla extract
Dry Ingredients
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 pinch salt
Main Ingredients
  • 2 cups mixed dried fruits Raisins, apricots, cranberries, etc.
  • 1 cup nuts Walnuts or pecans work best.
  • Optional extra fruits for decoration For a decorative touch.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream the softened butter and brown sugar together until light and fluffy. Beat in the eggs one at a time, followed by the applesauce and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  4. Slowly fold the dry ingredients into the wet mixture until well combined.
  5. Gently stir in the mixed dried fruits and nuts.
Baking
  1. Pour the batter into a greased cake pan and spread it out evenly.
  2. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  3. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack.

Notes

Don't skip the nuts for added texture and flavor. Consider adding orange or lemon zest for brightness. Store tightly wrapped for up to a week or freeze for up to three months.
