Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
Mix-Ins
  • 1 cup semisweet chocolate chips
  • 1 cup mini marshmallows
  • 1/2 cup chopped nuts (walnuts or pecans)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just incorporated.
  6. Gently fold in chocolate chips, mini marshmallows, and chopped nuts.
  7. Drop spoonfuls of cookie dough onto a lined baking sheet about 2 inches apart.
Baking
  1. Bake for 10-12 minutes, until edges are set but centers are still soft.
  2. Let them cool on the baking sheet for a couple of minutes before transferring to a wire rack.

Notes

If the dough is too soft, chill in the fridge for about 15 minutes before scooping. Feel free to alternate the nuts or add dried fruit for variation. Ensure you check the cookies as baking times can vary by oven.
